Production notes
Fermented in 56% concrete egg and 44% 860L Frendh oak puncheons. Aged for 10 months in concrete eggs and French oak puncheons.
The fruit was cluster sorted and whole cluster pressed. Fermentation was completed in concrete eggs and 860L French oak barrels. The blend was made on January 21st and the wine continued to age in concrete and barrels for 6 more months. Lightly fined, cold stabilized and lightly filtered before being bottled
